Loaded Overnight Oats

You probably read the title like woahhh “loaded” overnight oats…what does that mean?! Lemme tell ya, it means they’re loaded with tons of nutrients and goodies that’ll fill you up!

Overnight oats are typically oats soaked in a liquid like non-dairy milk. When you soak them overnight, it allows the oats to plump up similar to how they would if you cooked them on the stove. It’s a SUPER easy no-bake way to make a delicious, filling breakfast.

These overnight oats were highly requested by Ed. And don’t ever believe a man when they say they don’t have a sweet tooth. They’re lying. So these Loaded Overnight Oats have a hint of maple syrup to give them a little sweetness. Not to be biased, but this is the best way to start your day! Pair with a yummy coffee and you’re good to go!

Loaded Overnight Oats (yields 3-4 jars)

Ingredients:

  • 1 cup sprouted oats

  • 2 tbsp. chia seeds

  • 2 tbsp. flax seeds (not ground)

  • 2 tbsp. hemp hearts

  • 1 ½ cups coconut milk (or any non-dairy milk)

  • 1 heaping spoonful almond butter (or peanut butter)

  • ½ ripe banana

  • ¼ cup maple syrup

  • large pinch of salt

  • topping ideas: cacao nibs, coconut flakes, sliced banana, berries, almond butter drizzle, cinnamon or pumpkin pie spice

Instructions:

  1. add banana, milk, maple syrup, and almond butter to a blender and blend to combine

  2. pour the blended mixture to a large bowl, add in oats, chia seeds, flax seeds, hemp hearts, and pinch of salt. mix to combine

  3. transfer to mason jars (3 or 4 depending on how large you want your portions) and refrigerate overnight

  4. in the morning, stir mixture and top with almond butter, banana slices, or fresh berries. serve & enjoy!

notes:

  • they’re going to seem liquid-y when you first make them, don’t worry, they will plump up overnight!

  • feel free to add in a scoop of your favorite protein powder for some extra flavor and protein!

  • feel free to double the ingredients so you can have breakfast for the entire week prepped!

  • if you want to omit all the seeds, simply use half a cup less of milk
