Dark Chocolate Peanut Butter Cashew Cookies

To say I’m obsessed with Hu Chocolate is an understatement. Their bars are BEYOND DELICIOUS and made with no palm oil, no refined sugar, no cane sugar, no sugar alcohols, no dairy, no gluten, no emulsifiers, no soy lecithin aka basically just the good stuff: real organic cacao.

I had a PLETHORA of their Cashew Butter + Raspberry Dark Chocolate bars in my fridge and was inspired to create a new cookie using these bars. You could honestly use any of their chocolate bars in this recipe but I was going for more of a creamy and decadent nutty cookie, and boy did I achieve it!

Now go run to your local Whole Foods, get yourself some Hu bars, and let’s get baking!!!

Dark Chocolate Peanut Butter Cashew Cookies (yields ~10 cookies)

Ingredients:

  • 1 cup almond flour (I use Bob’s Red Mill!)

  • ΒΌ cup coconut flour

  • Β½ tsp. baking soda

  • Β½ cup coconut sugar

  • Β½ cup peanut butter, melted (chunky or smooth)

  • β…› cup coconut oil, melted

  • 1 egg

  • dash of vanilla extract

  • 2 Cashew Butter + Raspberry Dark Chocolate Hu bars, roughly chopped

Instructions:

  1. in a large mixing bowl, combine the almond flour, coconut flour, baking soda, and a pinch of salt. mix to combine

  1. in a separate bowl, beat in 1 egg, add in cooled coconut oil, coconut sugar, peanut butter, and vanilla extract. mix to combine then add to bowl with dry ingredients. mix to combine (*if your dough feels too dry add in another β…› cup coconut oil)

  2. fold in chocolate chunks then chill dough in the refrigerator for at least 1 hour

  3. once the dough has chilled, preheat oven to 350Β°f. line a baking sheet with parchment paper, and bake cookies for 12-13 minutes. transfer to a wire rack and let cool, sprinkle with maldon salt, & enjoy!

notes:

  • if you don’t have almond or coconut flour simply use 1 cup Bob’s Red Mill 1:1 gluten-free flour. the cookies will be less β€œnutty” but still delicious

  • to take it to the next level, melt some peanut butter and drizzle over the cookies once they are finished baking

  • don’t have coconut oil? no problem, just use equal parts butter!
