Spiced Ginger Cookies (gf)

I had allll the intentions of pumping out TONS of holiday recipes for y’all, but I’ve honestly been really enjoying my downtime here in the desert…aka slacking on posting the recipes…

However, these spiced ginger cookies are TOO GOOD to not post on the blog!!! If you like ginger…you’ll LOVE this recipe! These cookies are not only chewy, but they also have a little zing to them! And the best part (besides the taste) is that they won’t leave you with that sugar high like traditional cookies do! They are gluten-free and deeeeelicious. Okay, let’s get baking!!!

Spiced_Ginger_Cookies

Spiced Ginger Cookies (yields ~16 cookies)

Ingredients:

  • ½ cup coconut sugar

  • ½ cup butter, softened

  • 1 egg

  • ¼ cup of molasses

  • 2¾ cups almond flour

  • 1 tbsp. cocoa powder

  • 2 tsp. baking soda

  • 2 tsp. ground ginger

  • 1 tsp. cinnamon

  • ¼ tsp. salt

  • dash of white pepper

  • flake salt to garnish

Instructions:

  1. preheat your oven to 350°f. in a mixing bowl, cream together sugar, butter, egg, and molasses

  2. in a separate bowl, add almond flour, cocoa powder, baking soda, ginger, cinnamon, salt, and white pepper. mix to combine

  3. transfer wet ingredients to bowl with dry ingredients and mix until all the flour is absorbed into the dough

  4. line a baking sheet with parchment paper. roll dough into 1 inch balls and place on a baking sheet. (if the dough is sticking to your hands add more almond flour) DO NOT PRESS DOWN on balls—they will spread in the oven on their own!

  5. bake for 7-9 minutes. sprinkle cookies with a little bit of flake salt, let cool, then enjoy!!!

notes:

  • white pepper is the secret ingredient! it really brings out the ginger flavor

  • to prevent molasses from sticking to the measuring cup, you can spray a little coconut oil so it slips right out!

  • feel free to roll dough balls in a little sugar before baking ;)
