Crispy Baked French Fries
Wanna know what I love? Potatoes. I mean think about how versatile they are—mashed, fried, roasted, baked, I’ll take a potato in any way, shape, or form. But french fries just hit different ya know?
Fries are amazing, we all know this. But that’s usually because they are coated in some sort of peanut or vegetable oil (no bueno) and deep-fried. And while that makes my mouth (and soul) happy, it most definitely does not make my stomach happy. So I’m here to give you a healthier french fry that you can make at home, sans the stomach ache!
The key to getting your fries crispy in the oven is to soak them in an ice bath before baking. This helps release the starches from the potatoes, allowing them to get extra crispyyyy. Another trick here is to keep your fries on the slimmer side to help them bake faster! And finally, you want to make sure you aren’t overcrowding your potatoes when they bake, this prevents them from steaming! So if you have two baking sheets I highly recommend using both!
Okay, let’s get cooking!!!
Crispy Baked French Fries (yields ~2 servings)
Ingredients:
2 potatoes
avocado oil (or avocado oil spray, you can get this at Trader Joe’s!)
paprika
salt & pepper
Instructions:
rinse and dry potatoes and cut into ¼ inch sticks
fill a large mixing bowl with water and ice and place potato slices in ice bath. set aside for 15 minutes
while potatoes are soaking, preheat oven to 450°f, and line baking sheets with parchment paper. drizzle avocado oil (or spray) over the parchment paper
after potatoes have soaked, dry them off completely using paper towels. (make sure they are completely dry you don’t want any moisture/water or else they won’t get crispy) and place on baking sheets
drizzle (or spray) potatoes with more avocado oil, place in the oven, and bake for ~35 minutes, turning halfway through
once potatoes are finished baking, transfer to a large bowl and sprinkle fries with paprika and salt & pepper, toss, serve & enjoy!
notes:
as mentioned above, if you have two baking sheets use both! this will help spread out the potatoes and keep them from steaming
this method also works for sweet potatoes!
