Cobb Salad

I once heard Cobb stands for Chicken Onion Bacon Blue Cheese and idk if that’s true but I live for a good acronym so I believe it! I was craving a good Cobb Salad but a lazy girl Cobb salad ya know?

I didn’t use chicken or onion in this recipe so if that’s something you’d like to add to yours then go for it! I recommend buying a rotisserie chicken to make your life 10x easier.

Cobb Salad (makes 2-4 servings)

Ingredients:

for the salad:

  • 2-4 hard-boiled eggs, sliced

  • 4 slices of bacon, chopped

  • 1 head of romaine lettuce

  • 1 cup tomatoes, diced

  • 1 avocado, diced

  • ¼ cup crumbled blue cheese

for the dressing:

  • ¼ olive oil

  • 2 tbsp. balsamic vinegar

  • dash of maple syrup

  • 1 tsp dijon mustard

  • salt & pepper to taste

  • optional: spoonful of bacon grease for added flavor

Instructions:

  1. start by hard boiling your eggs. while eggs are cooking, cook your bacon (you can either bake it or cook it on the stovetop - your choice!)

  2. while bacon and eggs are cooking, prep your salad ingredients and set aside. prepare the salad dressing by mixing everything in a bowl and set aside

  3. chop your romaine and place into a large salad bowl. add in the rest of the salad ingredients including the bacon and hardboiled eggs. pour salad dressing over the salad and toss to combine

  4. serve & enjoy!

notes:

  • this recipe is great for a dinner party or for feeding a crowd. it’s easy, quick, and colorful!

  • like I mentioned above, feel free to add in chicken and onions if you’d like!
