Shrimp Spring Rolls w/ Peanut Sauce

I’m a creature of habit. Meaning I could literally eat the same few dinners every week but 1.) that’s boring and 2.) it’s good for your gut to switch up the foods you put into your body! And since it’s getting warmer (especially here in ATX), I’ve been CRAVING fresh, light, and healthy foods.

And what better recipe for spring than SPRING rolls?! Spring rolls are like Vietnamese burritos, but instead of a tortilla, they are rolled in rice paper. You can find rice paper in the Asian aisle of your grocery store. They come in hard-shaped discs and to get them wet you simply place them in warm water for ~15 seconds then carefully transfer/place them on a tea towel, add your ingredients, roll, and enjoy!

I love spring rolls because they are extremely versatile—you can really add any fresh ingredient you’d like in here! I used shrimp, carrots, sunflower microgreens, basil, cilantro, cabbage, and romaine lettuce in these but feel free to add/remove based on your personal preferences!

Ingredients you could add include bean sprouts, mint, cucumber, mango, edible flowers, rice noodles, jalapeño, jicama. Heck, even green apples would be delish in these!

I served these with a homemade peanut dipping sauce (recipe below), which you guys, seriously takes it to the NEXT LEVEL!

Another reason I love these spring rolls is because you don’t need to turn on your oven, which is a major win in my book!

I also usually eat about 2-3 rolls when using the large rice paper!

Shrimp Spring Rolls w/ Peanut Sauce (makes 1 roll)

Ingredients:

for the spring rolls

  • cooked shrimp, (make sure to remove the tails) - I use ~4 per roll

  • rice paper (1 sheet/roll)

  • carrots, finely sliced

  • cabbage, shredded

  • romaine lettuce

  • sunflower microgreens or bean sprouts

  • basil leaves

  • cilantro

  • 1 lime

for the peanut sauce

Instructions:

  1. chop all your spring roll ingredients and prepare a spring roll station (this makes it easier when assembling!)

  2. prepare the peanut sauce by placing all the peanut sauce ingredients in a bowl, whisk together to combine

  3. prepare your rice paper according to package directions

  4. construct the roll by laying down spring roll ingredients and roll as if you were making a burrito

  5. serve w/ peanut sauce & enjoy!

notes:

  • this peanut sauce recipe is enough for about 4 people! and if you don’t use it all simply store the rest in your fridge

  • this recipe contains soy (in the hoisin sauce) I personally don’t like eating soy, but the hoisin is what makes this recipe authentic! Coconut Secret offers a soy-free hoisin sauce if you are allergic/intolerant!

  • make sure to use natural peanut butter (aka the only ingredients should be peanuts and salt) because brands like Skippy and Jif use sugar which makes the peanut sauce too sweet
