Cookie Dough Cookies

Yes, you read that right…Cookie Dough Cookies. Allow me to explain…

I recently ordered 3 new jars of Oat Haus’ Granola Butter, cookie dough being one of them, and when I was thinking of creative ways to use this delicious butter (aside from spooning it straight out of the jar), cookies naturally came to mind. And that’s how Cookie Dough Cookies were born.

I won’t make this intro long because I don’t know if anyone actually reads this part…so here are a few things to note before we get to baking.

1.) Yes, you need cookie dough Granola Butter to make these. You could totally substitute with any other Oat Haus flavor, but the granola butter is the secret sauce to these cookies.

2.) If you want to bake with regular AP flour go for it! It’s a 1:1 ratio with the gluten-free flour I use. I use gf flour because gluten and I do not mix well.

Okay, enough talking, let’s get baking!!

Cookie Dough Cookies (yields ~16 cookies)

Ingredients:

dry ingredients:

  • 1 cup gluten-free flour (or regular AP flour)

  • 1 tsp. baking powder

  • pinch of salt

wet ingredients:

  • 1 egg

  • ½ cup butter, semi-melted & cooled

  • ⅓ cup cookie dough granola butter, room temp

  • ½ cup coconut sugar

additional:

  • dark chocolate chips

  • maldon flake salt

Instructions:

  1. in a large bowl, add in your dry ingredients. mix to combine

  2. in a separate bowl, add in all your wet ingredients and mix to combine. transfer dry ingredients into the bowl with wet ingredients and mix until fully combined

  3. fold in chocolate chips. refrigerate cookie dough for at least 1 hour (or freeze for 30 minutes)

  4. after your dough has chilled, preheat oven to 350°f and line a baking sheet with parchment paper. using an ice cream scooper, scoop out dough onto baking sheet (cookies should be ~1 inch). bake for 10-13 minutes. cool cookies, top with maldon salt

  5. serve & enjoy!!

notes:

  • I store my Granola Butter in the fridge so I microwaved it for a quick 20 seconds before adding to the wet ingredients

  • as I mentioned above, if you like baking with regular AP flour simply use the same amount of flour

  • one little tip, always double your cookie dough so you can have some for yourself and gift the other half to a friend :)
