Cobb Salad
I once heard Cobb stands for Chicken Onion Bacon Blue Cheese and idk if that’s true but I live for a good acronym so I believe it! I was craving a good Cobb Salad but a lazy girl Cobb salad ya know?
I didn’t use chicken or onion in this recipe so if that’s something you’d like to add to yours then go for it! I recommend buying a rotisserie chicken to make your life 10x easier.
Cobb Salad (makes 2-4 servings)
Ingredients:
for the salad:
2-4 hard-boiled eggs, sliced
4 slices of bacon, chopped
1 head of romaine lettuce
1 cup tomatoes, diced
1 avocado, diced
¼ cup crumbled blue cheese
for the dressing:
¼ olive oil
2 tbsp. balsamic vinegar
dash of maple syrup
1 tsp dijon mustard
salt & pepper to taste
optional: spoonful of bacon grease for added flavor
Instructions:
start by hard boiling your eggs. while eggs are cooking, cook your bacon (you can either bake it or cook it on the stovetop - your choice!)
while bacon and eggs are cooking, prep your salad ingredients and set aside. prepare the salad dressing by mixing everything in a bowl and set aside
chop your romaine and place into a large salad bowl. add in the rest of the salad ingredients including the bacon and hardboiled eggs. pour salad dressing over the salad and toss to combine
serve & enjoy!
notes:
this recipe is great for a dinner party or for feeding a crowd. it’s easy, quick, and colorful!
like I mentioned above, feel free to add in chicken and onions if you’d like!
