Gingerbread Pancakes (gluten & (semi) dairy-free)

Hello & Happy Holidays!!! It’s been a hot second since I’ve posted a recipe. If you don’t already know, my bf and I have been in Palm Desert since Thanksgiving—my dad and his wife live here and our family friend/neighbor was kind enough to let Ed and I stay at his place for the holidays. We will most likely be here until early January!

I’ve been pretty MIA here on Fine with Food, BUT I’ve been spending a lot of time with my family—going for walks outside, hiking, relaxing, playing board games, watching Christmas movies, cooking together, drinking wine, going to the driving range, etc. I’m basically a Palm Desert local at this point lol. And I’m loving every second of it. But I can’t leave y’all hanging on holiday recipes….SOOOO I present to you the EASIEST gingerbread pancake recipe you’ll ever see!!

I could have made these from scratch, but I felt as though most of us are busy during the holidays and don’t want to be spending an hour in the kitchen just to make breakfast. I also thought I’d share my love of Birch Benders with you and incorporate their delicious Paleo Pancake Mix into this recipe.

So behold…Gingerbread Pancakes! Okay, time to throw on your Christmas pajamas, pour yourself a (large) cup of coffee, and let’s get cooking!!

Gingerbread_Pancakes

Ingredients:

  • birch benders paleo pancake mix

  • gingerbread spice mix

    • 2 tsp. cinnamon

    • 1 tsp. ginger

    • ½ tsp. ground cloves

    • ¼ tsp. nutmeg

    • dash of white pepper

  • butter to grease pan

  • pancake toppings of your choice! I personally love sliced bananas, almond butter, flake salt, and a dash of cinnamon! :)

Instructions:

  1. prepare pancakes according to package instructions. add in gingerbread spice mix and pinch of sea salt. mix to combine

  2. heat a non-stick pan over medium heat. once pan is hot, grease pan with butter and scoop pancake mixture into pan. cook for ~2 minutes each side

  3. plate & top with your favorite pancake toppings. serve & enjoy!

notes:

  • you probably read “white pepper” in the ingredients list and thought WTF?! BUT this is a little secret ingredient to really bring out that delicious gingerbread spice flavor!

  • there’s no serving size…make as many pancakes as you’d like!!

  • feel free to take the gingerbread spice mix and make a giant jar of it to keep in your pantry!

  • although barney butter is my favorite almond butter brand, I personally like to use raw almond butter from Whole Foods when topping my pancakes because it has a thinner consistency!

  • I also like to keep the batter on the thicker side when making this recipe so the pancakes turn out fluffier!
