Paleo Pumpkin Pancakes
Every Saturday when I was growing up, my family would make homemade pancakes from scratch, and we would enjoy breakfast at our giant dining room table while reading the newspaper. When my sister and I were really little, my dad would get creative and make our pancakes into fun shapes like Micky Mouse or hearts, something I canβt wait to do with my future children one day!
Thereβs something so warming and comforting about a big stack of pancakes. But homemade pancakes can require a lot of ingredients, so Iβm here to simplify your life and fill you in on my all time favorite pancake (and waffle) mix: Birch Benders. I personally love their paleo pancakes because they are gluten & dairy-free and offer a healthy serving of protein and fiber!
And yes, I know Birch Benders makes a Paleo Pumpkin version, but I prefer to buy the plain Paleo version so I can switch up the flavors whenever I want!
This is probably the easiest recipe on the blogβ¦but itβs too good not to share!! Save this one for those cool fall mornings when youβre cravinβ a big ole stack of pancakes, and get creative with your shapes!!! :) Okay, letβs get cooking!
Paleo Pumpkin Pancakes
Ingredients:
Birch Benders paleo pumpkin mix
water
coconut oil
maldon flake salt to top
sliced bananas (or any fruit of choice) to top
maple syrup (I use this one!)
Instructions:
make the pancake batter according to instructions on packaging. add in a large spoonful of organic pumpkin purΓ©e and a few dashes of pumpkin pie spice. mix to combine
bring a skillet to medium-low heat. add coconut oil to pan and cook pancakes for about two minutes each side
top with pumpkin pie spice, maldon flake salt, banana slices (or fruit of choice), drizzle with maple syrup, serve, & enjoy!
notes:
make sure you use organic pumpkin purΓ©e and NOT pumpkin pie filling! (pumpkin pie filling is loaded with sugar)
you could also use this batter for pumpkin waffles!
