Slow Cooker Pork Adobo

My bf, Ed, is Filipino so every now and then he craves pork adobo. This dish is soooo flavorful and really easy to make! You basically throw it all in the crockpot, then once you’re ready to eat simply boil some green beans, make some white rice, and serve!

You could also make this dish with chicken, add in broccoli instead of green beans, or eat it sans rice. The beauty of my recipes is that you can add your own flair to them! :)

Slow Cooker Pork Adobo (yields ~4 servings)

Ingredients:

  • 3 lbs. pork shoulder

  • avocado oil

  • 1 whole head of garlic

  • Β½ cup coconut aminos

  • Β½ cup rice wine vinegar (or any vinegar except balsamic)

  • 1 red fresno chile or 1 tsp. red pepper flakes (optional)

  • 1 tsp. whole peppercorns

  • salt & pepper to season

  • 1 tsp. honey

  • 1 bay leaf

  • green beans

  • white rice

Instructions:

  1. dice whole head of garlic and fresno chile. set aside

  2. bring a cast iron skillet to high heat. cut pork shoulder into 2-inch cubes and season w/ salt & pepper. once the skillet is hot, add in avocado oil and sear meat on all sides until browned (~1 minute per side)

  3. transfer meat to slow cooker and add in garlic, chile, coconut aminos, rice wine vinegar, peppercorns, bay leaf, and honey. cook on low for 5-6 hours

  4. ~20 minutes before you’re ready to eat, cook white rice and green beans. for the green beans, we like to boil them for 2 minutes using the liquid from the crockpot

  5. spoon rice into a bowl, add in pork adobo, and green beans. serve & enjoy!

notes:

  • if you don’t own a crockpot, you can braise the pork in a covered dutch oven (or sautΓ© pan) for 2 hours. make sure to add ~Β½ cup of water if choosing this method

  • Whole Foods sells trimmed green beans in a bag, which makes it super easy to cook with!

  • feel free to use however much rice as you’d like! we love jasmine or basmati rice

  • substitutions:

    • coconut aminos - soy sauce

    • whole peppercorns - cracked pepper

    • honey - agave or sugar

  • if you don’t like spicy food simply omit the chile/red pepper flakes
