Summer Shrimp Salad

I know it’s only March, but my mind, body, and soul are R-E-A-D-Y for summertime: warm weather, pool time, sunshine, grilling, barbeques, swimming, tan skin, fresh food, a glass of crisp rosé, bonfires, cute dresses, sandals, the whole shebang.

And although it’s barely even spring, I was craving a crisp, fresh, coastal-inspired salad loaded with shrimp, citrus, and yummy fruit.

I also recently stumbled upon the cilantro lime salad dressing by Primal Kitchen and it is a GAME CHANGER when it comes to whipping up salads. I’m all for homemade everything, but sometimes you just need a lil’ assistance, and this salad dressing is the real deal—real ingredients, no bad stuff, and super delish. This dressing would even be AMAZING on my Skirt Steak Tacos (paired w/ a Simple Jalapeño Margarita, of course)!

My inspo for this salad came from my desire for warmer weather. I just want to be eating this salad on vacation at a beach-side restaurant, with my love, wearing a chic new maxi dress, hair in a slick bun, sunkissed cheeks, tan skin, bright-colored mani/pedi, sand underneath my feet, massive sunglasses on nursing a cold glass of sauv blanc….is that too much to ask for???

Okay enough daydreaming, let’s get to the root of this post: the salad.

Summer Shrimp Salad (yields 2 servings)

Ingredients:

  • 1 lb. uncooked shrimp, peeled & deveined

  • avocado oil

  • your favorite taco seasoning (I used this one!)

  • 1 large avocado

  • 1 large heirloom tomato

  • 1 orange + zest of orange

  • crispy lettuce of choice (I like little gems)

  • cilantro lime salad dressing (I used Primal Kitchen)

  • salt & pepper to season

Instructions:

  1. if you bought shrimp that isn’t peeled or deveined, make sure to do this as your first step!

  2. bring a cast iron skillet to medium-high heat. season shrimp with taco seasoning and salt & pepper. add avocado oil to hot skillet and sear shrimp on each side (~2 minutes /per side)

  3. prepare salad: place lettuce at the bottom of a large salad bowl. roughly dice avocado and heirloom tomato and place in bowl. zest orange and add zest to the salad. cut the orange into slices and add to the bowl

  4. top with cooked shrimp and drizzle salad dressing over salad. toss to combine, serve, & enjoy!

notes:

  • I would suggest purchasing the biggest shrimp you can find at the seafood counter of your supermarket :)

  • feel free to add in your own touch to this salad—you could swap grapefruit for oranges, add a squeeze of lime, add in fresh cilantro, etc.!
