Walnut Butter Toast

On the days I don’t feel like having a smoothie for breakfast, I make this walnut butter toast. I started making my own walnut butter because walnuts are easier for me to digest than almonds (& I avoid peanuts as much as possible because they cause inflammation). I’ve been adding walnut butter to literally everything, especially this toast—it’s healthy, filling, and super easy to make! (and let me know if you want the walnut butter recipe!)

Walnut Butter Toast (serves 1)

Ingredients:

  • 2 slices Base Culture bread (in the frozen section at Whole Foods)

  • 2 tbsp. walnut butter

  • 1/2 banana

  • raspberries

  • blueberries

  • pumpkin pie spice

Instructions:

  1. toast bread (I don’t have a toaster, so I use my oven and broil the frozen bread on high for about six minutes turning halfway through)

  2. spread walnut butter over toast & top with sliced bananas, raspberries, and blueberries. sprinkle pumpkin pie spice on top and enjoy!
